In October 2022- According to authors D. Escobar-Saeza, L.Montero-Jiménezb, P.García-Herrerab, and M.C.Sanchez-Matab of Journal Food Research International, this study focuses on the nutritional assessment of various commercially available plant-based drinks. The scientific literature on the presence of bioactive and undesirable compounds was reviewed. Vitamins A, B12, D and calcium are easily found in many commercial plant-based drinks.

Journal Food Science and Technology: Evaluation of Chickpea as Alternative To Soy in Plant-Based Beverages, Fresh and Fermented
In November 2018 - According to scientists Shi Wang, Venkata Chelikani, and Luca Serventi of the Journal Food Science and Technology, A plant-based beverage made with garbanzo chickpeas was developed. Paralleled to soymilk, the chickpea beverage contained lower amounts of protein (1.21 vs. 2.09 g/100 g), fat (0.34 vs. 0.74 g/100 g) and sugar (0.24 vs. 0.33 g/100 g), due to higher starch content (2.08 vs. 0.14 g/100 g). Sensory analysis revealed that the fresh chickpea beverage was as standard as the soy one. On the contrary, the fermented chickpea beverage received lesser ratings than the soy one for appearance. This study showed that chickpea can be a promising substitute to soy in the development of a fresh plant-based beverage, while optimization is required to apply it in a fermented beverage. From the above fact, the fresh chickpea beverage showed potential as substitute of soy milk for nutritional and organoleptic quality. The fresh chickpea beverage contained less fat & protein, but more carbohydrates than soymilk. Ferment ability was comparable to that of soymilk. Further developments are required to minimize syneresis of the fermented chickpea beverage and evaluate micronutrients and phytochemicals.
